- 8 slices white bread, crusts removed
- 320g Maestrella shredded mozzarella
- 100g tomato or roasted pepper confit
- 3 eggs
- 10 cl milk
- Salt and freshly ground pepper
- 200g breadcrumbs
- Oil for frying
Make sandwiches using the bread, mozzarella, confit, and salt and pepper leaving a small margin around the edges. Seal the edges with your fingers (you can also brush a bit of milk over the edges before adding the filling).
Beat the eggs with the milk. Dunk the sandwiches in the egg mixture and then in the breadcrumbs making sure that they are completely covered.
Heat the oil for frying in a pan, then fry two at a time for 2-3 minutes in order to melt the mozzarella. Place onto a paper towel, and that’s all there is to it!
