Make sandwiches using the bread, Maestrella mozzarella, confit, and salt and pepper leaving a small margin around the edges. Seal the edges with your fingers (you can also brush a bit of milk over the edges before adding the filling).
Beat the eggs with the milk. Dunk the sandwiches in the egg mixture and then in the breadcrumbs making sure that they are completely covered.
Heat the oil for frying in a pan, then fry two sandwiches at a time for 2-3 minutes in order to melt the mozzarella.
Drain on paper towels. Season with salt, halve diagonally, and serve!
