Heat the olive oil in a pan and sauté the sliced onion until golden.

Place 2 tortillas on a work surface.
Spread some Mix Maestrella on the tortillas.
Add the cooked chicken and onions, then top with more cheese.
Place the remaining 2 tortillas on top.
Brush with crème fraîche using a pastry brush and sprinkle the remaining Mix Maestrella.
Preheat the oven to 200°C and bake for 10 minutes on trays lined with parchment paper.
Cut the quesadillas into triangular portions and serve immediately.
Serve with crème fraîche, salsa, or guacamole.
For extra flavor, add some grilled pepper strips or a pinch of sweet paprika to the filling.
