Preheat the oven to 200°C
Blend half of the beetroot with the philadelphia, a drizzle of olive oil, cumin, salt & pepper
Slice the other half of the beetroot and do the same with the avocado. Set aside for later use
Place a small bowl in the center of the puff pastry, spread the beetroot cream around the edge, leaving 2 cm free and sprinkle with half of the shredded mozzarella Maestrella. Remove the bowl from the centre, cut the puff pastry crosswise and fold over the filling
Make 8 cuts around the edge and fold each area in half over the filling to form the points of the star
Brush the puff pastry star with beaten egg, sprinkle with black sesame seeds and bake for 20 minutes
Remove the star from the oven 5 min before the end of cooking time to arrange the slices of avocado and beetroot and cover with the remaining shredded mozzarella Maestrella
Finish cooking, sprinkle with crushed pistachios and serve on a pretty plate in the center of your table !
