Bring a saucepan of water to the boil and cook the pasta according to the instructions on the packet.
Melt the butter in a saucepan, remove from the heat, and add all the flour.
Return the saucepan to a low heat, pour in the milk gradually, and stir until the mixture thickens.
Add the Mozzarella, Cheddar, Maasdam, and the nutmeg. Season to taste.
Drain the pasta and combine with the cheesy béchamel sauce.
Garnish with fresh herbs and serve immediately!
