Aubergines stuffed with beef and mozzarella

List of Ingredients
  • 4 large aubergines or 8 small
  • 300g of minced beef
  • 200g of Mozzarella 40% MG/ES shredded Maestrella
  • 2 tomatoes
  • 1 tin of crushed tomatoes
  • 1 onion
  • Salt and pepper
  • Olive oil

THE STEPS OF THE RECIPE

Preheat the oven to 200°C.

Cut the aubergines in half lengthways, drizzle with olive oil, season with salt,  square the flesh and bake for 25 minutes.

Slice finely an onion, fry in a pan and sear the beef.

Add the tin of crushed tomatoes and simmer for 15 min.

Remove the aubergines from the oven scoop out them, cut the fresh into pieces and add to the pan-fried beef and tomatoes.

Fill the aubergines with the stuffing.

Slice the tomatoes et spread them over the stuffed aubergines.

Sprinkle with Mozzarella 40% MG/ES shredded Maestrella and bake for 10 minutes.
