Our expertise and years of experience guarantee consumer safety, high-quality milk and mozzarella manufactured using a carefully monitored process thanks to our dedicated R&D and industry teams.
Our 2 factories based in Luçon and Herbignac are dedicated to mozzarella with a high tech process that combines quality and productivity. Thanks to our cow-milk process we produce 50 000 tons of mozzarella per year.

After being collected from ours farms, the milk is emptied into large tanks in our factories.
In the cheese-making tanks, ferments are added to the milk. The mixture will set and form curds.
Then the curd is cut into cubes and stirred constantly and gently to separate the curds and whey.
The curds go through the stretcher at a specific pH in hot water, giving the cheese its distinctive texture.
This process is generally known as “PASTA FILATA”
Moulding & Salting
The cheese is moulded warm then cooled in brine for several hours.
The mozzarella is shredded or diced.
Our finest Mozzarella is finally packed in film under a protective atmosphere to preserve all its qualities.
