Process

Milk preparation

Following collection from ours farms, the milk is emptied into large tanks, at the site at which it will be transformed
Preparation and standardisation guarantee constant milk quality

Coagulation

In the cheese-making tanks, ferments are added to the milk, the preparation will set and form curds.

Cutting

Then the curd is cut into cubes and stirred constantly and gently to separed curd and whey

Stretching

The curds go through the stretcher at a specific pH in hot water, giving the cheese its distinctive texture.
This process is generally known as “PASTA FILATA”

Moulding & Salting

The cheese is moulded warm (in block or cylinder), then cooled in brine for several hours.

Cutting

The mozzarella is shredded or diced.

Packing

The Mozzarella Maestrella is finally packed in film under protective atmosphere to preserve all its qualities.
